Low Carb Breaded Pork Chops

Preheat oven to 325˚F. Lightly grease a medium-size ovenproof casserole or baking dish with butter or coconut oil.
In a small, shallow bowl, mix the bread crumbs with the garlic powder and Parmesan cheese. Put the beaten egg into another small, shallow bowl (or on a plate). Remove all fat from the chops; clean and pat dry. Dip each chop first in the egg, then in the bread-crumb mixture. Coat well. Place on a platter.
Heat a medium or large skillet on medium-low. Heat coconut oil or butter and add the chops when the fat is hot. Turn down heat and briefly fry the chops until lightly browned on both sides, about 2 or 3 minutes. Transfer the chops to the casserole dish and bake for about 40 to 45 minutes or until done. (Check doneness with an instant-read meat thermometer.) Serve immediately.
