Low Carb Stuffed Blue Cheese Patties

Divide the beef into eight equal portions on a sheet of waxed paper or aluminum foil. Press each portion into a patty about 14 inch thick.

Mix all the other ingredients together and divide the mixture equally between four of the patties, placing it in the center of each patty, leaving some space around the outer edge to seal the patties. Put one of the remaining four patties on top of those with the blue cheese stuffing. Press or pinch the edges of the patties to seal firmly.

Lightly grease a skillet or griddle with a bit of coconut oil, and, when hot, place the patties on it. Cook for approximately 4 to 6 min- utes on each side or until cooked through, without residual pink color. Ground beef is safest cooked through to at least medium or medium-well. Check with an instant-read meat 
thermometer if in doubt.

Variation: Grilled Blue Cheese Patties

This recipe works well in clamshell-type home grills, such as the George Foreman Grill, or on an outdoor grill. Cook about 8 minutes in a preheated clamshell-type grill or about 5 minutes per side on a medium-hot outdoor grill. Check to be sure no pink color remains in the meat.
