Low Carb Barbecued Peanut Butter Chicken
This chicken is a marvelous treat. It's basted with a spicy peanut butter–vinegar sauce as it cooks over the coals.
PREPARATION TIME: 15 minutes.

Preheat grill or start fire in the grill.
Thoroughly wash broilers and pat dry with paper towels. Rub the chicken pieces with peanut oil, salt, and pepper. Set aside.
To make the barbecue sauce, combine all the sauce ingredients in a 1-quart saucepan. Mix well and heat through (make sure the peanut butter is melted). Set aside.
When the grill is ready, put the chicken pieces on it. Baste them with the sauce as they cook; turn chicken often. Grill for about 11⁄2 hours or until completely done, but chicken should register 165˚F when done.
Variation: Broiled Peanut Butter Chicken
Rainy day? Just move the cooking indoors. Preheat the oven at 400˚F. Put the split broilers on a greased rack, skin side up. Cook for about 5 minutes, then baste lightly with the peanut sauce. Bake for a total of
