Low Carb French Toast




This French toast employs waffles instead of white or French bread and you will love it. You can use any waffles from this book. If you are using frozen waffles for making French toast, let them sit until all ice crystals have evaporated or stick them in the oven for a few minutes at 250ºF.

PREPARATION TIME: 3 minutes with waffles on hand and thawed.
COOKING TIME: 4 to 6 minutes.
SERVING SIZE: two 4-inch square waffles or one 712-inch round waffle. AMOUNT PER SERVING: 6.2 grams of carb, 30.9 grams of protein.

Lightly beat eggs and cream. Pour mixture in a pan that will hold the waffle. Turn the waffle two or three times to allow it to absorb the eggs. (All the egg mix will not be absorbed.)

Heat a large skillet over medium-low heat and melt butter in the skillet. When the butter foams (do not brown), add the waffle. Pour any egg not absorbed by the waffle over the top. Cook waffle slowly on one side until the egg is cooked. Turn and cook slowly on the other side. Serve immediately with a favorite low-carb syrup.
