Low Carb Grilled Bourbon Buffalo Steaks
Here's a dish for the cowboy and cowgirl in all of us. For the guy or gal who was born too late to rope and ride at the roundup, sleep on a bedroll under a canopy of stars, and grill a fresh buffalo steak over the open fire, this dish is the next best thing. The recipe doubles easily for bigger crowds—all that limits you is the size skillet you have available for finishing the steaks.

Light grill and let the grill or the coals get medium hot.
Rinse the steaks under cool tap water and pat them dry with paper towels. Dust both sides of each steak lightly with garlic salt and press the pepper into both sides of the meat. Place steaks on the grill. Grill for 2 to 3 minutes on each side and remove from heat.
To finish the steaks, melt butter and sauté onion in a skillet until tender and translucent, just starting to become golden. Add the steaks to the pan with the onions, then add the bourbon. Finish cooking steaks another total 3 to 5 minutes, turning once, for medium-rare to medium. Do not overcook.
