Low Carb Crouton Egg Bake




With a small amount of effort, you can have eggs cooked on a bed of toasted croutons and topped with cheese—a great leisurely breakfast or brunch. You can easily adjust this recipe for more or fewer people.

PREPARATION TIME: 10 minutes.
BAKING TIME: 15 minutes. (If croutons must be made, add 10 minutes to the preparation time.)
SERVING SIZE: 1 ramekin.
AMOUNT PER SERVING: 2.6 grams of carb, 17.8 grams of protein.

Preheat oven to 325˚F. Lightly butter or oil four 4-inch ovenproof ramekins or bowls.

Put one-fourth of the croutons on the bottom of each ramekin. For each of 4 ramekins, break two eggs into a separate bowl and slide them on top of the croutons into each ramekin. Pierce yolks with a toothpick. 

Season eggs to taste with salt and freshly ground pepper. Sprinkle with cheese and parsley and dot with butter (optional). Bake until the eggs are set. Depending on how firm you want the eggs to be, this takes about 15 minutes or a little longer. Serve immediately.
